Hot Cross Bun bread and butter pudding!

Easter is just around the corner, and the lovely people at The Crooked Well have given us the recipe for their special Hot Cross Bun Bread and Butter Pudding!

This recipe is perfect for children who want to help mixing or pouring the the ingredients (not the hot ones) or laying the Hot Cross Buns in the dish.

Makes enough for 4-6 people

   Ingredients

250ml double cream
250ml milk
6 egg yolks
80g sugar
2 dessert spoon sultanas
1 teaspoon vanilla essence
6 hot cross buns cut in half & butter each side

   Method

Layer the sliced buns in your earthenware dish sprinkling sultanas between the layers.
Heat milk, cream, 40g of sugar and vanilla in a saucepan and when it is beginning to boil remove from the stove.
Whisk the egg yolks and remaining 40g of sugar in a bowl until slightly fluffy, then pour in the milk mix and whisk until fluffy.
Pour the mixture onto the hot cross buns and leave to soak for 30mins.
Pre-heat your oven on 180°c. Cover the buns with tin foil and place in the oven to bake for 30mins.
Take buns out of the oven and leave to cool down for 20 minutes before serving.
